Birthday chocolate cake

This recipe has been my friends favorite of the last couple of months. For several birthdays including my own I made this quick soft chocolate cake. I was surprised how easy the recipe was and the amazingly flavoured result.

The recipe is from joyofbaking.com (definitely one of my favorite cooking/baking websites)

Chocolate cake

200 gr white flour

100 gr sugar

25 gr cocoa powder

1 teaspoon baking powder

3/4 teaspoon baking soda

1/4 teaspoon salt

75 gram melted butter

240 ml warm water

1 tablespoon lemon juice (preferable fresh lemon juice)

1 teaspoon vanilla extract

Frosting

170 gr dark chocolate

170 ml cream(35% fat)

1 tablespoon butter

Well let’s get started:

1. Combine the dry ingredients in a bowl: flower, sugar, cocoa powder, baking powder, baking soda and salt. 2. Combine the wet ingredients: butter, water, lemon juice and vanilla.3. Mix the dry and wet ingredients into a smooth batter. 4. Grease a cake pan and put baking paper on the bottom. (I used a 24 cm round cake pan) 5. Put the pan in a pre-heated oven (170 celsius) for about 30 minutes.6. To prepare the frosting melt the chocolate au-bain marie and add the cream and butter. Keep stirring untill a dark smooth sauce. When its done, take it off the fire to let it cooldown. 7. After the chocolate cake is done and cooled down, pour the frosting on top. Leave it for a few hours untill the frosting is hard before serving.
